Dishin' With Dee - Recipe

Potatoe Latkes
3 large baking potatoes (1 1/2 lbs.)
2 grated onions - medium
2 tbsp flour or matzo meal
1 tsp baking powder
2 lightly beaten eggs
1 tsp salt
1 tsp pepper
Cooking oil - just enough to cover bottom of frying pan


Coarsely grind potatoes into a sieve and squeeze out as much liquid (starch) as possible. Transfer to a bowl and add the remaining ingredients.


Heat the cooking oil in a heavy frying pan until hot. Add large spoonfuls (pancake size) of the potatoe mixture into the hot oil and immediately turn the heat down to medium. Cook for 3 to 4 minutes on each side.


Place browned latkes on paper towels before serving to absorb excess oil. Serve at once or keep warm in oven for up to 20 minutes. Serve with applesauce, sour cream, or cranberry sauce.


Ummmm delicious, inexpensive, and great for a dinner parties!
